Hand soap is made up of a long chain fatty acid and a cation. It is a substance which as a polar end (the cation) and a non polar ';tail'; (the fatty acid). This enables soap to work on polar (charged) dirt as well as non polar greases. The soap bubbles capture the dirt and rinse water washes it away.





Soap cannot do very much with protein based dirt, such as dried blood or similar stains. That needs an enzyme based detergent to clean the item.
